Fried Biscuit Balls with Sweet Sauce

I love canned biscuit dough. Not the fancy flaky stuff or the pre-buttered type or those giant mega biscuits. Just simple small buttermilk biscuits. 10 to a can. Sold with 4 cans together.
That stuff is one of the best things to have on hand in the fridge. There are a ton of different things you can turn it into. Plus if you keep eggs on hand it means you can have eggs and biscuits at any moment. I use it for spontaneous egg desires too. But even more so I use it to transform it into other things. Cheese biscuits, tiny donuts, mini pizza things, stuff it with jam, stuff bacon into it… there are a lot of options. Today I am sharing my recipe for one of them.
What you need:
Butter, enough to fry in, I used about 2/3 of a stick
One can of biscuit dough
A couple spoonfuls of jarred lemon curd
A couple spoonfuls of preserves (I used black raspberry but you could use strawberry, blackberry, blueberry, etc)
A heaping spoonful of mascarpone
— For the sauce
—- Put the lemon curd and the preserves in a microwave safe bowl (I wouldn’t recommend using plastic for this, it would be very hard to clean out of it)
—-Microwave it, stirring occasionally, until it is a hot bubbly gooey liquid
—-Mix in the heaping spoonful of mascarpone and stir until you can’t see it anymore
–For the biscuit balls
—-Divide each biscuit into 4 chunks
—-Heat the butter in a frying pan over medium heat
—- Fry the biscuit chunks until they are golden and delicious
—- If the pan goes dry, add more butter
—- you may need to turn the pan down to low eventually to make sure the biscuits don’t burn
They are delicious. I could eat the fried dough alone but the sauce really makes it amazing.
The downside? They are super high calorie and well, your plan to only eat a couple? Good luck, the plate will be empty in no time.
