Breakfast-Dinner : Alton Brown Taught Me to Make Hollandaise

Last night for our Courtney’s teaching Courtney’s to cook we made “brinner.” French toast, eggs benedict, and sweet potato hash browns. The most challenging item on that list was certainly the hollandaise for the benedict. I used Alton’s recipe- though I will note that the eggs reached the point where the whisk made a clear line through them far, far faster than the 3-5 minutes it suggests.

Still it ended up pretty beautiful. Don’t you agree?
